Extra Anejo Tequila Tasting
Please judge each sample vial based on the following. Aroma, Taste, and Finish. Base your evaluation on number scores 1 through 5 with 5 being the best. Notes can be left to recall specific characteristics you detect for each sample. Pour each sample into its own glass (Glencairn Glasses or Champagne Flutes are ideal). In between samples smell the coffee beans as it will cleanse the aroma. Sip a little water in between samples to cleans the palate.

SEE IT
Begin by examining the color of the Tequila against a white background, tilting the glass away from you. Look for bright and in the case of Extra Anejo, a dark saturated color.
SIP IT
Take a good size sip. Hold the spirit in your mouth: swish it around (like mouthwash but less vigorously), allowing it to coat your entire palate. What does the Tequila feel like? Is it thin and acidic? Is it rich and velvety? Does it give your mouth a warm glow?
SWIRL IT
To release the aromas of the spirit, swirl it in the glass and then give it a deep sniff. Much of what you will taste is the result of these aromas. Repeat as necessary, taking notes, and enjoying the aroma.
SAVOR IT
Draw in some air between your front teeth or across your tongue and "gargle" the spirit in your mouth. Keep in mind that your tongue can identify only four basic tastes: saltines, bitterness, sweetness and acidity. All other flavors actually reach your brain as aromas through retro-nasal passage at the back of your throat. By "chewing" the spirt or combining it with air, you cause its volatile elements to vaporize and that's a good thing.
